Food Vendors

Just curious if anyone uses a outside vendor for food? If so do they pay you a flat fee? Nightly? A percentage? Not at all?

Food has a very high profit margin, keep it in house if you can. We have used outside vendors at other events and charged a percentage. They have never been completely honest in sales figures.
