Sobek could be super scary, as well as ammit. A priests funerary chamber where they prepare mummies could be really cool. I designed an egyptian haunt for a theme park once and I we were going to use baboons in it to (I was the guy who liked Congo). I still have a few of the mask molds too.
lets see... room ideas
Funerary chamber- groups walk between bodies on tables draped in sheets a few have the sheets off and you can show stages of mumification. a few of the sheeted bodies could be animatronics and one could be an actor.
Sphinx room- guests are asked a riddle in this room and must choose between two doors the answer to the riddle is a symbol over the door they are supposed to take. If they choose the wrong door, they get bit by an asp. The Asp is really two red sharpies in a latex sleeve that looks like a snake, when they pull the handle to open the wrong door a simple lever makes the "snake" bite them on the hand. The wrong "door" is fake and cant open.
hieroglyphic chamber- easily carved out of foam the walls are full of symbols and drawings of figures. In one section the drawings are life sized and as the guests walk by the figure forms slide in and actors reach through at them. Easily acomplished by making the wall out of 6" thick foam cut with a hotwire. handles mounted in the backs of the puzzle like figure pieces allow the actors to pull them out and reach for the guests, buttons could change the light to a back light when the windows open.
how is that for starters?

Nethercraft has some great Egyptian walls. Check with them...

Scarab beetle room- Im not entirely sure what to with it, but beetles are scary to alot of folks, especially if they think they are crawling on them, perhaps a projection effect where bettles are crawling all over the floor (which is covered in pecan shells) and the maggot dropper from oak island is mounted above them.the projected beetles would appear on them too as they walked under it.
Treasure room-I think a stilt Anubis could be pretty bad ass- in some kind of throne room dimly lit by minispots, have his costume be completely gold, mask and all so he looks like a set piece on his throne, then he can hit a switch and the spots go out, then a strobe comes on and he gets up from his throne and goes aftr them, that could be cool, decorate the room like a treasure room, so the strobe bounces off all of the brass objects and gold painted things.

Frightworld, in Buffalo, has a very good Egyptian themed haunt! Your theme should depend on what time period it takes place... is this a freshly dug tomb around 140 B.C. ... or is this a modern day excavated tomb where mummies are coming BACK to life?
Here's a link to some photos of Frightworlds haunt:
http://www.facebook.com/screampark?v...d=104552019814
If it's modern day... def. use:
-lots of odd sized crates and boxes
-caverness like carved stone halls between each room, the more irregular the better
-All the room mentioned before plus: room with traps (spike walls, bottomless pits, etc.), treasure rooms, vault "cave-in" scare room, excavation storage room, side attack mummies (room where you walk between two rows of three mummies, when triggered they "attack), end with the Pharaohs room!
CHARACTERS: Guards, diggers/servants, royal family, pharaoh, queen, Anubis, other egyptian demons/gods/ghost, bugs/spiders/snakes,
SOUNDS: Def. some creepy Egyptian style music, bug sounds, ghost whispers, sounds of rock scraping together or sliding across one-another, maybe looped "threats" from the pharaoh... would be cool to have some actual spoken Egyptian in the haunt!
Hope this helps!
